Recipe For A Delicious Gut-Friendly Beet Soup!
Warmer weather has arrived and with only a
few cooler days left with us, it would feel great if we could have
mood-satisfactory meals, no matter the day.
So, today, Jeremy Lee Chen Seong brings to you the recipe for a delicious and
nutritious beet soup which is even gut-friendly. Read on!
Step
1: Preheat the oven to 375°F (190°C).
Step
2: Rinse the beets, Trim stalks and leaves. Put in
a roasting pan with shallots, fennel, thyme, olive oil, and a seasoning of salt
and pepper. Cover the pan and roast for 50 minutes.
Step
3: Dry fry fennel seeds over medium heat for around
45 seconds. Crush it after fry.
Step
4: Put the peeled beet and fennel seeds in a fry
pan. Squeeze the shallot flesh in it. Add the stock and red wine. Bring to boil
slowly. Once it boils, lower the heat to simmer for 15 minutes.
Step
5: Stir horseradish into yogurt and season to
taste.
Step
6: Blend the soup until very smooth. Remove from
heat and immediately whisk in horseradish yogurt. Serve in bowls or cups.
